The Savvy Cook Book Favourites

I am always looking for good cookbooks for vegetarians and vegans. My flatmate bought me The Savvy Cookbook by Izy Hossack for my birthday and I have loved going through it.

I thought I would show you my favourite recipes I’ve done so far.

The first one was a Lime-Chilli Corn and Crispy Onions. This recipe can be vegan and gluten-free my changing some of the ingredients.

Ingredients serves 2;

  • 3 tbsp olive oil
  • 1/2 red onion
  • 1 tbsp plain flour
  • 2 ears of fresh corn/200g of drained canned corn
  • 1 and a half tsp of honey
  • juice of half a lime
  • 1 jalapeno chilli
  • 30g of feta
  • Salt

This was so easy to make, I have most of this in my cupboard. It was so tasty, crispy and something different from my regular salads.

The second meal I chose to do out of this book was the quickie chilli. I liked this because there were different variations of the same dish to suit your personal taste.

Ingredients serves 2-3;

  • 2 tbsp olive oil
  • 1 carrot
  • 1 celery stick
  • 1 red onion
  • 3 garlic cloves
  • 240g of chickpeas
  • 400g of canned tomatoes
  • 200ml of water
  • Salt
  • Sugar

This is like the base and then you change the spices depending on which you want. I served mine with avocado cream and wholewheat tortilla wrap toasted.

I would highly recommend this book which I believe you can get in urban outfitters and probably on Amazon or something! I think it is a really nice way of accommodating everyone’s different food specifications.
