Butternut Squash and Sweet Potato Soup

Nothing beats a good hearty bowl of soup! Literally nothing. Someone tell me something that is better. Oh plus crusty bread…

Today I made a lovely soup with Butternut squash, sweet potato as the main flavour and onion, garlic and leek as the base of the soup.

I didn’t really use a recipe but sort of did everything by eye.

  • Half a butternut squash (didn’t use the bell, got another recipe for that!) Chopped peeled and diced
  • Two sweet potatoes chopped and diced
  • One onion
  • Two cloves of garlic
  • Two chopped leeks
  • Vegetable stock
  • Salt & pepper
  • Chilli flakes
  • Pumpkin seeds

  1. Dice the onion and crush and finely slice the garlic and add to a large pan with olive oil until softened

2. Cut the leeks and add to the pan, again until softened

3. Add the already prepared Butternut squash and sweet potato into the pan

 

 

4. Add the seasoning, salt, pepper, chilli flakes and paprika

5. Add vegetable stock and boil for about 5 mins

 

 

6. Leave to simmer for 20 minutes until everything is soft

7. Either spoon into a food processor or use a handheld mixer and blitz to your preference

8. Pop into a bowl and garnish with chilli flakes and pumpkin seeds
