Simple Vegan Breakfasts Ideas

‘Breakfast is the most important meal of the day’

It is important to really get you started for the day however, it doesn’t have to be boring it can taste amazing. Most people tend to rush breakfasts and end up with toast or cereal. Even if you don’t have much time you can make something nutritious and exciting which will keep you full until lunchtime (or just your mid-morning snack).

 

Avocado on toast

You could just have smashed avocado on toast but why not try pimping it up slightly. Here I have added Linda McCartney sausages which are one of my favourite vegan sausages. I’ve also added some mushrooms and tomatoes which I lightly fried off in a pan. Then to finish it off I popped some pumpkin seeds and balsamic drizzle to finish it off.

Make sure you season your smashed avo, salt and pepper, cumin and lime juice. This really makes your breakfast pop! Here I have used simple bread but if I’m feeling fancy I will use sourdough.

Porridge

Nothing beats a bowl of hot porridge on a cold morning. I’m also not opposed to having porridge for dinner. Porridge for me is made using oat milk and water to make it super creamy and then the toppings are where I get crazy. Nut butter, seeds, fruit and syrups are my favourite.

I’ve gone for peanut butter, hemp, chia and flax seeds for this one. You could also make this as overnight oats if you don’t have time in the morning.

Cereal 

Now, if you remember I said that cereal was boring but not when you add toppings to liven up your dish and add some more nutritional value. You have to be careful with cereals as sometimes they sneak lots of sugars and nasties into them. I go for standard wheatabix or a variation of it, with banana or chopped apple. Then some extra seeds for that fibre and maple syrup to add some sweetness.

It’s quick and easy to make in the morning but still nutritious. Also, there is nothing expensive about wheat cereal and fruit, so very accessible for most.
